INGREDIENTS
PIE CRUST
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon granulated sugar
1 cup (2 sticks) unsalted butter, chilled and cubed
6-8 tablespoons ice water
FILLING
6-8 medium hand picked apples
3/4 cup granulated sugar
1/4 cup brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, cut into small pieces

1 tablespoon milk
1 tablespoon coarse sugar (optional)
INSTRUCTIONS
MAKE THE PIE CRUST
In a large bowl, whisk together the flour, salt, and sugar.
Add the chilled, cubed butter and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together. It should be moist but not sticky.
Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
PREPARE THE APPLE FILLING
Peel, core, and thinly slice the apples.
In a large bowl, toss the apple slices with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, allspice, salt, and flour. Mix well to coat the apples evenly.
ASSEMBLE THE PIE
Preheat your oven to 425°F (220°C).
On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Transfer it to a 9-inch pie pan, pressing gently into the bottom and sides.
Pour the apple filling into the crust, mounding slightly in the centre. Dot with small pieces of butter.
Roll out the second disc of dough into a 12-inch circle and place it over the filling. Trim any excess dough, then crimp the edges to seal.
Cut slits in the top crust to allow steam to escape.
ADD THE FINISHING TOUCHES
In a small bowl, whisk together the beaten egg and milk. Brush the mixture over the top crust.
Sprinkle with coarse sugar for extra crunch and sweetness, if desired.

BAKE THE PIE
Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 20 minutes.
Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
If the crust is browning too quickly, cover the edges with foil to prevent over-browning.
COOL AND SERVE
Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This allows the filling to set.
