This classic dessert features a flaky crust and a sweet, spiced apple filling, making it the perfect treat for any occasion. Let’s dive into the delightful process of making a delicious apple pie from scratch.


INGREDIENTS


PIE CRUST

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon granulated sugar

  • 1 cup (2 sticks) unsalted butter, chilled and cubed

  • 6-8 tablespoons ice water


FILLING

  • 6-8 medium hand picked apples

  • 3/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 tablespoon lemon juice

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground allspice

  • 1/4 teaspoon salt

  • 2 tablespoons all-purpose flour

  • 1 tablespoon unsalted butter, cut into small pieces

  • 1 egg, beaten

  • 1 tablespoon milk

  • 1 tablespoon coarse sugar (optional)


INSTRUCTIONS


MAKE THE PIE CRUST

  • In a large bowl, whisk together the flour, salt, and sugar.

  • Add the chilled, cubed butter and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.

  • Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together. It should be moist but not sticky.

  • Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.


PREPARE THE APPLE FILLING

  • Peel, core, and thinly slice the apples.

  • In a large bowl, toss the apple slices with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, allspice, salt, and flour. Mix well to coat the apples evenly.


ASSEMBLE THE PIE

  • Preheat your oven to 425°F (220°C).

  • On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Transfer it to a 9-inch pie pan, pressing gently into the bottom and sides.

  • Pour the apple filling into the crust, mounding slightly in the centre. Dot with small pieces of butter.

  • Roll out the second disc of dough into a 12-inch circle and place it over the filling. Trim any excess dough, then crimp the edges to seal.

  • Cut slits in the top crust to allow steam to escape.


ADD THE FINISHING TOUCHES

  • In a small bowl, whisk together the beaten egg and milk. Brush the mixture over the top crust.

  • Sprinkle with coarse sugar for extra crunch and sweetness, if desired.

BAKE THE PIE

  • Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 20 minutes.

  • Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 35-45 minutes, or until the crust is golden brown and the filling is bubbly.

  • If the crust is browning too quickly, cover the edges with foil to prevent over-browning.


COOL AND SERVE

  • Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving. This allows the filling to set.
